I find an easy way to do an impressive layer-cake, is to make any (big) batch of sweety-ball/biscuit type mixture you like/know already; divide it into 3 big balls, roll these out flat & in between each layer put a layer of sliced banana, berries, any sweet (not too watery) fruit.  Then put a frosting on top & sides - our favourites are mashed banana & ground coconut, or avocado/honey/carob powder, or avo/honey/coconut/lemon.

Decorate with fruit, nuts, edible flower petals. Same recipe, a thousand possible outcomes!!

For the cakey part we use any combination of:
dry ingredients:
ground (dry) nuts/seeds, coconut, carob, soaked, dried & ground buckwheat

sweet ingredients:
dried fruits (soaked or not), grated apple, grated carrot/beetroot/zucchini, honey

other:
superfood/pollen, spices,
vanilla bean, grated citrus peel (mandarin/orange is good), tahini, almond butter, flax oil,
