Dessert at home: probably doesn't look like much, but it was yummy! Asian pears and walnuts sautéd in agave nectar, a tsp vegan butter, a tsp coconut oil, cinnamon and vanilla extract. Frozen banana and unsweetened vanilla almond milk puréed in my VitaMix then hardened a bit by refreezing. A bite of warm and crispy then a bite of cold and creamy. Mmmmmm!

Dinner at Tida Thai restaurant. Appetizer of vegetarian fresh summer rolls with a peanut sauce. Mixed vegetables in a bean sauce with added cashews and steamed rice. Requested two things: no fish sauce and no broccoli (never sits well with me). Even if something is listed as vegetarian in an Asian restaurant, you have to specify no fish sauce, cause fish isn't considered meat. Well ya know, to the non-vegetarians of the world.



And to finish the night off (we're celebrating a new job), vegan soy orange dreamsicle frozen yogurt at The Skinny Dip. O' lawd, this is gooood! I wonder if I could get my nutritional needs met by living on vegan froyo. Doubtful.

Made vegetarian chili from scratch today. I'm one of those who throws in everything but the kitchen sink, so prepare yourselves...

In a 2 quart sauce pan, I put...
- a bag of Morningstar crumbles (from the frozen section of the grocery store)
- a can of tomato paste
- a can of diced tomatoes
- a can of tomato sauce
- two handfuls of black olives (sliced)
- 4 green onions (tops and bottoms)
- 1/2 c. almond milk
- couple of splashes of Tamari wheat-free soy sauce
- a handful of raw cacao nibs (cause I heard chocolate in chili made it more delish)
- two tbl raw almond butter
- seasonings to taste (you know me guys, I don't measure) --- lots of chili powder, ground red pepper, parsley, garlic powder, salt and pepper

After cooking on med-high heat for about 10 minutes, I turned down the heat and let it simmer for about 20 minutes. Then I put it atop Baked Tostidos chips and added some shredded mozzarella (totally optional if you wanna keep it higher vegan - Morningstar Crumbles are vegetarian but not vegan; you could use Boca Crumbles to keep it 100% vegan).
I was out of peppers and sweet onion, so I used green onion. Sometimes I just get an urge to make something but am too lazy to go to the store, so I use what I have on hand.

FYI Morningstar Crumbles are made of TVP (Textured Vegetable Protein - based from soy protein concentrate)

As for the cacao nibs (raw, unprocessed) --- I don't really know if I'm noticing a difference or not, cause I haven't made this chili before without it. Tastes good though! Almond milk I tend to put in recipes to give it a richer, creamier texture. It feel like it makes it substancial --- same with almond butter. It's a way for me to get my emotional "bad eating" needs met without using cream, cheese, butter, or other bad and fatty ingredients. I dunno, I'm kinda weird with my cooking. I'm SURE you dont need half of the ingredients I use; it's mostly personal preference. Taste and adjust....:)

I think I might be PMSing. I'm craving quite a bit right now. Not necessarily unhealthy foods, just more than normal.

This morning I went out while Steph was still sleeping and had a little quality alone time. One of the things I did that made me quite happy was having breakfast at Yorgo's Bageldashery, one of my most favorite local breakfast spots in Norfolk. I scrutinzed the plethora of vegan options on the menu and finally settled on a vegan breakfast wrap of egg, sausage and cheese. AND I practiced portion control and good decision-making by not getting chips OR their homemade vegan chocolate chip cookie that always makes me go weak in the knees. Now THAT is self-control!

We went to the movies this afternoon to see "No Strings Attached," while waiting to have our truck's tires replaced at Firestone across from the theater. Before we bought our tickets, we went into the dollar store to pick up less expensive and healthier options. I got a bottle of apple juice, from concentrate, and a package of in-the-shell sunflower seeds. I also ate a Peanut Butter Cookie Larabar during the movie.

This evening we went to Garden Ridge and picked up two new food storage containers, 1.) Cereal-On-The-Go, that holds dry cereal in the bottom and cold milk in the top with a spoon and a freezable insert, and 2.) EZ-Freeze StayFitTM Deluxe Salad Kit, that holds salad in the bottom, salad toppings in the middle, and a little dressing cup on top. Way cool, and possibly will decrease the absurd number of containers I currently take to work.

We had dinner at Jersey Mike's. Then when we got home, we watched the Oscar-winning documentary, "The Cove," about the annual dolphin massacre in a secret cove in Taiji, Japan. I was emotionally crushed and immediately made a donation to Ric O'Barry's organization, Save Japan Dolphins.

Ya know what feels really good? Sharing your healthy snacks with a colleague who really wants to be on board with her health but just isn't sure how to do it. That's what I did today. Everything I made or brought for me, I brought for her. Actually I brought about four times what I would normally bring for me, but I really wanted to give her a broad range of healthy snack options...Which meant I kinda overate today. Oh well, it was for a good cause. We shared a fruit smoothie for breakfast. I brought her an organic hard boiled egg that I keep on hand for Steph. She shared my sesame bran sticks, Almond Nut Thins, dried sweetened cranberries (haven't dug into my new apple-sweetened ones), roasted unsalted sunflower seeds, toasted almond slivers, raw pecans, raw walnuts, raw cashews, dry roasted peanuts, Claussen pickle spears, Raw Rev 100 chocolate & coconut live organic 100 calorie bar, Peanut Butter Cookie Larabar, carrot sticks and Trader Joe's Goddess dressing, organic fruit leathers. She thoroughly enjoyed her day of eating mini-meals and snacks and was surprised at just how delicious and fulfilling healthy can taste. Sometimes someone just needs to walk a path with a friend.

The colleague that walks with me every day, and who I'm becoming good friends with, brought a snack for us to share at lunch today. She, very thoughtfully, looked at every ingredient on the package of Food Should Taste Good Sweet Potato Tortilla Chips, and decided they had all of my qualifications and then some for a healthy snack - lactose free, gluten-free, low sodium, no preservatives and made from simple ingredients - corn, sunflower/safflower oil, sweet potato, corn bran, evaporated cane juice and sea salt. So I ate a few and instantly fell in love....until I realized they might taste a little too good. So I googled them. Unfortunately, this is what the FAQ said under "Are your chips fried?" --- "After we mix our recipe of all-natural ingredients into a batter, we bake our chips in an oven for a long time before lightly cooking them in high oleic sunflower oil. High oleic sunflower oil has a higher percentage of monounsaturated fat than canola and olive oil, and it has no trans fat nor cholesterol. Because of our baking process, we use less oil, making our chips lighter, crispier, and more delicious than many others." The word "cook" in the same sentence as "bake" makes me think they really mean fried. Otherwise they would advertise these delightful chips as "baked." Oh well, those few chips were absolutely heavenly, and if I were eating fried foods, I'd definitely be chompin' on these.

- random kitchen snacking on raw pecans and Almond Nut Thins
- 2 'chicken' wraps: 2 whole grain and flax tortillas and 1 Morningstar 'Chickn' Griller, organic spring mix, organic grape tomatoes, mustard, ketchup, 1 Claussen pickle (I cut the tortillas in half, then cut the griller into 1/4s and made these little mini roll-ups...so very good!)

Had a very successful last day of my cleanse. Wasn't too tired, no headaches, felt more focused.

I was excited to come home tonight to some packages from Amazon of some of my online shopping purchases. I couldn't, for the life of me, find dried cranberries that aren't sweetened with sugar, in any local stores. So I did a search online, and was pleased to find some that are sweetened with organic apple juice concentrate.

I also bought a wonderful 19-piece measuring spoon and cup set, with sizes that go up to 2 cups and down to 1/32 tsp. I've never been able to find measuring spoon sets in stores that are 1/8 tsp, which is so often a measurement recipes call for.



The last item that arrived today from Amazon was a new Kuhn Rikon stainless steel whisk. I have had the same whisk for the last decade and the rust in the grooves informed me that it was ready to be replaced.

Headache most of the day. Tired and kinda disoriented at times. Worked til 7 pm, a 12-hour day. Walked with the colleague I normally walk with. We did 28 minutes. I could feel I wasn't into power walking, so I just did my best. I didn't do as well getting in my drinks at work as I felt I did at home. I had to force myself to drink throughout the day; not because I wasn't hungry, I definitely was...my stomach was growling constantly. But i just wasn't in the mood. I had too much sweet drinks and felt over-sugared. I was a bit hyper toward the end of the day and may even have become a bit short in temperment. It didn't help that a few minutes into the evening overtime, one of my colleagues brought in a piping hot bag of popcorn, which only made my stomach growl more. That was torture, but I just tried to appreciate the smell and imagine how it will feel to eat on Thursday.

First day of my juice/green smoothie cleanse. Went well, considering I stayed home from work today with a headache. Being at home is actually harder for me with eating than it is when I'm at work. At work, I have my set foods and drinks in my cooler and that's all I have to choose from. At home, there's a whole kitchen calling my name. I fought through it and kept on my path. Every time my stomach would growl I'd go grab a water, or another bottle of juice (preportioned into many 16 and 24 oz bottles). I slept off and on throughout the day, when I wasn't in the bathroom peeing. Seems like I peed 20 times today.

Food Intake:
- 16 oz Simply Orange, not from concentrate, orange juice
- 33 oz water
- 20 oz Simple Apple, not from concentrate, apple juice with 4 oz POM pomegranate juice added
- 1 liter green smoothie: 1 1/2 frozen bananas, 2 c. frozen strawberries, 2 c. filtered water, 2 tbl organic milled flax seed, 10 curly leaves of fresh kale (pulled from the stems) mixed in my Vita-Mix until creamy

Took a nice walk with Steph and the dogs today, on the first beautiful weekend day we've had in what seems like months. It took us a long time, because the dogs hadn't been out of the house in a while. It wasn't the typical brisk walk I like to take over lunch, but it felt good to be out in the sun, letting the dogs sniff and mark every few blocks. And hey, I didn't sit in the house all day.

Watched Season 2 of The Big Gay Sketch Show today. On this one episode, there was a skit of Shim Shai Horowitz , host of vegan/raw cooking show, and it was hilarious!! Rent the full season on Netflix or buy just this episode for $1.99, which has many other skits, in addition to the pee-your-pants funny raw food/vegan skit, click here. Beware if you offend easily...the show as a whole is no holds barred and often raunchy.

Cause I'm not a football fan (at all), I took the opportunity to go to Wal-Mart and shop around a bit, getting things for my 3-day juice/smoothie cleanse. (FYI shopping during Super Bowl is definitely the best time to go!) While there I was
searching for some organic vegetable broth; I guess they've discontinued it cause all I can find is this. Would love to know why high fructose corn syrup is necessary in BROTH!?!? Obviously, I didn't buy it. I'll stick with my bouillon cubes until I find a healthy liquid option. Screw you, Swanson.

Had a great day today. Did some shopping, both online and in stores, for kitchen accessories and groceries. Got some new glass food canisters, measuring spoons and cups, whisk, dried apple-sweetened cranberries (gave up looking for the cranberries in stores and just bought them online).

Went to dinner at a local burrito bar that we've never been to before. You get a laminated menu and a dry erase marker. You check off the items you want on your burrito and sign your name at the bottom of the menu. It was kinda fun.

The best way to keep going is not to stop. Easy concept. But it takes will to achieve. Each day I remind myself that if I choose to sit my lunch away, instead of going for a walk, the next day it will be easier to make that same choice.

Went grocery shopping tonight. Didn't try the Ugli fruit, but did have a fun time laughing at it.

Only one of my colleagues and I are still doing our 20 second water chugging activities throughout the day, though not every hour as we used to. This afternoon, after having forgotten to chug for several hours in a row, she said to me, "Come on, Michelle. It's time to lubricate your mind." I thought that was hilarious, but actually a very good way to look at it. Whenever we drink water, it does work like greasing the wheels on a vehicle. Gotta remember that...

After Steph and I had dinner tonight, she wanted an ice cream cone next door at Dairy Queen. I went in with her, but didn't even think about getting anything. I'm a rock star, I tell ya. A fricken rock star.

A colleague commented today that she could tell I'm slimming down. It's so nice to know my hard work is paying off, even if I don't know what the actual number of pounds lost is (remember, I'm not weighing for 3-6 months).

- 2 vegan burger wraps: 2 whole grain tortillas, 1 Morningstar vegan griller cut in two halves, lettuce, mini-pearl tomoates, pickles, mustard, ketchup
- unsweetened fresh brewed iced tea
- dessert: raw walnuts, raw cashews, raw pecans, toasted almond slivers, rolled oats, almond milk, agave nectar, cinnamon, salt, vanilla extract all mixed together and baked for 30 minutes in the oven at 350 degrees
- 1 c. mixed fresh fruit salad
